Garlic Pickle

Half a teaspoon of this will add a kick to any dish.

Garlic Pickle

In a small pan, dry roast the fennel seeds, fenugreek seeds and star anise for about 30 seconds, then add the olive oil.

After another 30 seconds add the sugar, salt and vinegar and let every thing simmer for about 5 minutes.

Take off the heat and let it cool down, then add the garlic, and mix well.

Transfer into glass jars and leave for a week for all the flavours to combine before using.

  • ¼ teaspoon fennel seeds
  • ¼ teaspoon fenugreek seeds
  • 1 star anise
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • ½ tablespoon salt
  • 175ml white malt vinegar
  • 3 bulbs of garlic, peeled and finely chopped
